The Fichman Lab at Hebrew University, Rehovot campus, develops bioinspired materials for food and health, combining chemistry, biology, and materials science. We create hydrogels, films, and emulsion stabilizers using self-assembling peptides, amino acids, and polysaccharides. Our research spans nano-to-macro characterization, integrating fundamental and applied studies to develop functional materials for food and medical applications, including scaffolds for cell growth, antibacterial agents, and drug delivery platforms.
